Malai ka Paan (a lost recipe)

Many people among may have heard about various paans like Calcutta Paan, Banarasi Paan, etc. And now a days some new paan are getting famous like Fire Paan, Ice Paan, Chocolate Paan and end number of various paan. But have you ever heard of Malai ka Paan? Well it was invented long ago but it became lost recipe and now it's only available in lucknow.
Malai ka Paan, which is also known by different names in lucknow like Lucknavi paan, Balai ki Gilori or Malai ki Gilori was invented in a sweet shop named Ram Arsey in 1805. In those times Nawab of Awadh used to rule and tobacco were banned. Ram Arsey had discussions on how to get rid of habit of chewing tobacco. So they decided to give an attempt of making sweet dessert, which gives similar texture like paan.
Now let's talk about how Malai Gilori is made, it's stuffings and it's texture. The word Malai in Malai ka Paan itself says that it's made up of malai. To replace betel leaf they used malai (Milk Cream) with a touch of rose to enhance flavour. They make thin layers Malai with the of sheets and it's requires a lot of efforts to set malai. It is stuffed with lots of royal dry fruits (also called sukha mewa). It's texture is so tender, soft that as soon as you will have a bite of paan, it will immediately melt in your mouth and trust me if you have habit of chewing tobacco, you will definitely quit having tobacco. If you ever visit lucknow you should try malai ka paan as except lucknow it is not available in any corner of the world.
